sagegiotto|When in Assisi, admiring the cute off-perspective Giotto paintings of St. Francis, I was served the best pasta ever. It can be made in 5 minutes. For 2 people: cook any fresh pasta. Melt 65 grams of butter with a dash of good olive oil and throw a small handful of sage leaves in it. Stir on low-medium heat for 4-5 minutes until the butter turns light brown. Do not wait until it turns black. Mix pasta, brown butter, crispy sage and top off with pepper and some grated Parmigiano Reggiano or shaved fresh truffle. The best! Via Tuscan Cookbook
